Mori no Mushroom Risotto has plenty of umami from raw wood shiitake mushrooms and porcini mushrooms.
The rice is (actually) Yamada Nishiki sake rice that is perfect for risotto.
In the basic recipe, powdered cheese is used, but 20g of gorgonzola (dolce type) is added to create an irresistible dish of mushrooms, gorgonzola flavor, and spiciness.
Easy to make. It's the same as the basic recipe until you add the cheese.
Stir-fry raw Yamada Nishiki rice in butter, add 2 tablespoons of white wine and 200 ml of water, and heat for 10 minutes.
Add the contents of the sachets of mushrooms and dried vegetables, add 2 tbsp of water 3 times and finally add 20g of Gorgonzola and voila!
The recommended pairing is a white wine with a slightly nodding taste like Pinot Grigio.
